Today's wedding cake does not have to be white or even a "cake" in the traditional sense. A denser torte may be another choice. Here's a few tips for selecting your wedding cake:

1) Look at our bakery listing according to your area, and if they have a web page of information check that first before calling or going to their website if they have one.

2) The choice of what your cake is made of, particularly the icing and decorations, is dependent on the atmospheric conditions at your reception. If the cake is going to be unusually warm or in the sun the day of your reception it will affect what options you have for icing and decorations. Buttercream, for instance, might not hold up for several hours of exposure to really warm temperatures.

3) Take a look at some of the available books on wedding cake design even before you take a look at the portfolio available at a bakery. Chances are your bakery can duplicate a cake you've seen elsewhere that really captivated you--just give them a chance by bringing a picture and details.

4) Your cake can reflect the style and personality of the bride and groom--it can be humorous, ornate, avant garde, traditional, simple, or of course, mirror the theme you've chosen for your wedding and reception.

5) The bride and groom figurines stereotypically topping wedding cakes are disappearing from style. Other choices include floral arrangements done in sugar or real flowers.

6) Cake may be sold for dollars per slice or a complete cake price. A separate groom's cake is becoming a tradition too. And you may opt to have a simple sheet cake ready in the kitchen if you have a lot of guests.

7) When talking to wedding coordinators or to the reception sites themselves ask particularly whether they are obligating you to purchase a wedding cake as part of their wedding package. If you have chosen the cake of your dreams and particularly want it from a certain bakery then stand your ground. If a banquet hall that obligates you to buy one of their cakes will not deduct the cost per person for the wedding cake in their package deal then rethink either your cake decision or the reception location decision.

8) Remember that the wedding cake is the centerpiece of your reception. Take time to review your choices. And most importantly, talk to the cake specialists or bakers 2 to 3 months before your wedding date! Some bakeries only take one or a couple bookings per a certain date. Allow plenty of time to order your cake to be sure they have availability for your wedding date.

9) Discuss the pricing, how much is needed for deposit, and what are the due dates for this and the final payment. Also be sure of the cancellation policy.

10) Understand that today's cakes have many different types of fillings available--including sliced peaches, fresh strawberries, pudding, bavarian creme, cream cheese buttercream, whipped chocolate, rum buttercream, etc. Again, the time of year and where the cake will sit can affect what choices you should make.
